Knead a few times, then put in a 9" pan and spread to the edges. Cut an X in the top. Bake for 25-30 minutes covered@425, 10 minutes uncovered. Natasha's Kitchen: 500g AP flour 50g sugar 1 tsp sea salt 1 tsp baking soda 6 tbsp cold butter 1 3/4 cups acidulated milk (as above) 1 egg Preheat oven to 375F. Whisk together dry ingredients. Cut butter into small pieces and work into flour until crumbs form. Into a well in the center of the dry ingredients, pour the combined wet ingredients. Mix until dough just comes together. Shape into a round loaf and transfer into a cast iron skillet. Score a large X into the top. Bake for 50-55 minutes.
