Oatmeal chocolate cookies (originally lactation cookies, but just good regardless) 3 cups rolled oats 1.5 cups all purpose flour 5 tablespoons brewer's yeast or nutritional yeast 3 tablespoons ground flaxseed 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp ground cinnamon 1/4 tsp salt 12 tbsp butter 4 tbsp unrefined coconut oil 1.5 cups sugar 1 large egg +1 egg yolk 2 tsp vanilla extract 1.5 cups chocolte chips/chunks 1/2 cup flaked coconut Preheat oven to 350F. Combine oats, flour, yeast, flaxseed, baking powder, baking soda, cinnamon, and salt. In a mixer, beat butter and coconut oil until creamy. Add sugar and beat until fluffy, 4-5 minutes. Add egg and yolk, beat until combined. Add vanilla extract and beat until combined again. Gradually add dry ingredients while beating on low until combined. Stir in chocolate chips and coconut. Scoop dough into 1" rounds and place on baking sheet about 2" apart. Bake for 10-14 minutes or until bottoms are just golden.
