Molasses cookies 280g all-purpose flour 1.5 tsp baking soda 2 tsp ground ginger 1.5 tsp ground cinnamon 1/4 tsp ground cloves 1/4 tsp nutmeg 1/4 tsp salt (or omit if salted butter) 3/4 cup butter (1.5 sticks), cold 1/2 cup brown sugar 1/4 cup granulated sugar 1/3 cup molasses 1 egg 2 tsp vanilla extract 1/3 cup sugar for rolling Whisk the dry ingredients together. In a mixer, beat together butter and sugars until creamy and combined. Add molasses and beat until combined. Add egg and vanilla and beat until combined. Scrape mixer bowl as needed. Mix the dry ingredients into the wet ingredients until combined. Cover tightly and chill for at least 1 hour. Preheat oven to 350F. If dough has chilled for more than 2 hours, let sit at room temp for 30 minutes. Roll 1 tbsp of dough into a ball, then roll in sugar, and arrange 3" apart on baking sheet. Bake for 11-12 minutes or until the edges set.
