Eggnog bread (a family holiday favorite) Single loaf 2 loaves 270g flour (about 2.25 cups) 540g 2tsp baking powder 1 tbsp + 1 tsp 1/2 tsp salt 1 tsp 1/2 tsp nutmeg 1 tsp 2 eggs, beaten 4 eggs 1 cup eggnog 2 cups 3 tbsp bourbon 1/4 cup + 2 tbsp 1 tsp vanilla 2 tsp 1 stick butter, softened/melted 2 sticks 1 cup sugar 2 cups Whisk the first group of ingredients together until well combined. Beat the eggs well to generate some extra fluff, then whisk the second group of ingredients together until well combined, custardy in consistency, and full of lots of little air bubbles. Add in list order. Pour the dry ingredients into the liquid and fold until combined. For a more cake-like consistency, use slightly expired baking powder (or a little less). Bake at 350F for 50 minutes, turning after 30 minutes for even bake, then check it. When the top is nicely browned and a fork stuck into the bread comes out clean, it's ready. If it isn't done, wait five minutes and try again.
